1Tbspminced garlic
6cupschicken stock
115 ozcan diced fire-roasted tomatoes
315 ozcans white cannellini beansSmall white beans work as well.
2tspdried Italian herb seasoning. Or make your own with any combo of thyme, oregano, basil, parsley, or rosemary.)
1cupany short dried pasta Such as ditalini, mini shells, or macaroni
2cupsbaby spinachOr substitute kale or escarole
2tspsaltor to taste
¼tspfreshly ground black pepperor to taste
Instructions
Add 2 TBS of olive oil to a preheated stock pot. Add in sausage and onions, and saute until sausage starts to brown, 4 – 5 minutes.Stir in the garlic, until fragrant, about 1 minute.Add the rest of the ingredients except for the spinach, salt, and pepper. Stir well and bring to a boil. Reduce to a simmer, cover, and cook for 10 minutes. Stir in spinach until wilted. Add salt and pepper to taste. Top with homemade sourdough croutons. Pass shredded Parmesan cheese at the table, if desired.
