Hot Dips Appetizers

Sally's Hot Artichoke Dip

This recipe was given to me by my old friend Sally. She is no longer with us, so please toast to her when you make it. The best part is you can mix the entire thing in the baking dish, so no dirty prep dishes. Enjoy this during happy hour or as an appetizer

Ingredients
  

  • 1 12 oz canned Artichoke Hearts water packed (not marinated), Trader Joe's has them at a great price.
  • 1 cup grated Parmesan Cheese, plus 2 Tablespoons for topping. the better the quality, the better the dip. I like the fresh shredded, rather than grated.
  • 1 cup Mayonnaise Best Foods, or Hellman's
  • 1 6 oz canned diced Green Chili peppers
  • Tortilla Chips to serve

Instructions
 

  • Mix all ingredients together in a small baking/serving dish. Sprinkle an additional couple of tablespoons of shredded Parmesan on top. Bake in 350-degree oven for about 30 - 40 minutes, until golden brown and bubbly. Top with scallions. You may serve this with crackers or veggies, but I like it best served warm with tortilla chips.
